Chef Brian Polcyn & Michael Ruhlman are releasing a new book “Pate, Confit, Rillette” and will be in Cleveland teaching a 2 day whole hog charcuterie class at Saucisson called “Praise the Lard”. To celebrate the book, class and collaboration of butchers & chefs we will be hosting an epic dinner at Polpetta! We (Chefs Adam Bostwick, Brian Okin, Melissa Khoury, Will Skinner & Penny Barend) are using the new book as inspiration for the 5 course dinner. We will each be preparing a course along with Chef Brian Polcyn. Chef Will Skinner of Gertz Culinary will be preparing the Amuse & Intermezzo also inspired by the new book.
Each course will be paired with a cocktail or glass of wine to round out your dining experience.
